Recipe of the Day: Agua Fresca de Pepino (Cucumber Water)
The Recipe of the Day is for Agua Fresca de Pepino, Cucumber water. Agua Frescas are traditional in Mexico for being refreshing, healthy and available everywhere. You can always find an Agua Fresca stand pretty much in every town, and at the very least you can find Agua fresca in every Mexican restaurant.
Agua Fresca literally means “fresh water”. These are drinks typically made out of fruits, vegetables, grains or dried flowers. Some of the favorites are Horchata and Jamaica. Today, we’ll be making Cucumber water.
Cucumber water is very refreshing, healthy and tasty, and one of the favorites for the whole family. Your ingredients list is cucumbers, limes, mint, sugar and water. This is a great refreshing alternative for those hot days of summer! And best of all you can make it in about 15 minutes.
Aguas frescas are budget-friendly, tasty and a great alternative to excessively sugary bottled drinks, such as juice concentrates or “nectars”. You can even replace the sugar with your favorite alternative such as agave honey or stevia. There will be a slight change in the taste, but you make it your way!
We typically present them in huge plastic or glass containers similar to this one, but I only use those for parties. For every day presentation I use my old water dispenser, you can get a similar one here.

Agua Fresca de Pepino
Cucumber Water
- 3 quarts water
- 3 cucumbers
- 1 cup lime juice
- mint (optional)
- sugar (or any sweetner you prefer)
Peel the cucumbers and remove the tips and discard that. Remove the seeds and discard that. Cut the cucumbers into smaller pieces, we'll put this in a blender.
Tip: To discard the seeds I use a teaspoon, I find the shape is just right to remove the middle section where all the seeds are.
Place the cut cucumbers into a blender and blend for about 3 minutes. If you need to add some water. Stop the blender and add the sugar, continue blending until the sugar is dissolved.
With the help of a strainer put the mix into a pitcher or a water dispenser. Strain slowly and discard what's left on the strainer.
Add the lime juice into the water dispenser and mix with the cucumber and sugar
Wash and disinfect the mint. Take the leaves and put them into the water dispenser with the cucumber, lime and sugar. Add ice and water to fill.
TIP: To serve you can sugar the rim of a glass, put ice in it and decorate with a few mint leaves
